I'm about to undertake my final project and am going to specialise in hand embroidery. I agree with the other comments, I think your ideas would work well for 2-3 different skill levels. Sampler in basic colors for beginners, an intermediary for those looking to beef up skills and offer different patterns of yours but require they use own supplies. We learned the basic stitches, which was really nice, particularly mastering French Knots.
